Making cupcakes has to be one of the easiest things I make for the kids. Whether it’s something healthier like banana muffins or a sweet treat like vanilla cupcakes, I find they are the easiest way to please even my pickiest kid. These cupcakes were super easy to make and the recipe is very straightforward and even making the little bunny bums required very little skill too. The perfect Easter treat that you can make at home.
Cupcake Ingredients (makes 24)
2 3/4 cup all-purpose flour
2 1/2 tsp baking powder
1 tsp salt
1/2 cup margarine, softened
1 3/4 cup sugar
1/2 tsp vanilla
1 1/4 cup milk
Bunny Bum Ingredients
4 cups icing sugar, sifted
1/2 cup margarine, softened
5-6 tbsp milk (or until you reach your desired thickness)
5-6 drops of green food colouring for the grass
Instructions for Cupcakes
Preheat your oven to 350°. Sift the flour, baking powder and salt together and set aside. Cream the margarine and sugar together and then add in the vanilla and the eggs. Slowly add the flour mixture alternating with the milk until combined. Pour into a muffin tin lined with cupcake liners and bake for 20-22 minutes. Set aside to cool completely before frosting.
While your cupcakes are baking, you can mix up the buttercream. Add your softened margarine to a bowl and add the icing sugar a little at a time to mix together, add in the vanilla and a tablespoon of the milk at a time until you reach your desired consistency. This recipe will make more than enough icing to cover 24 cupcakes. Split this into 2 equal amounts and add the food colouring to one until you reach your desired shade of green. Spoon into a decorating bag with a number 233 Wilton tip (multi-opening tip makes the grass) and place in the fridge until you are ready to use it. I put the other half of the buttercream away for my next recipe as it will keep in the fridge for 2 weeks. You could also half this recipe and still have plenty for your grassy cupcakes.
Bunny Bum Mold Instructions
While the cupcakes are cooling, you can work on the bunny bums. These are super easy to do but take a little time and since you need 24, you will have to repeat this step 4 times as the mold does 6 bums. Start by putting your candy melts into a disposable decorating bag as this will make this process so easy. Place the bag in a microwave-safe dish that you can prop the bag upright in and start by heating the candy melts on 50% power for 30 seconds, take the bag out each time and squish it around and then put it back in for 30-second increments until melted and smooth. Cut a tiny bit off the tip of the pink candy and a larger bit off the white.
On each of the molds, use the pink candy to fill in the toes of the bunny feet. Let harden about 5 minutes and then fill each mold up with white candy melts. Tap the mold until they are flat and even and place in the freezer for 4 minutes. You can then pop them out easily and put them aside until you need them. Repeat this step until you have the amount you need for your cupcakes.
Decorating the Cupcakes
I want to start by saying I have never used this tip for grass until these cupcakes so that will tell you how super easy it is to make the grass. Using your decorating bag with the #233 tip on it, start by squeezing out the grass and then quickly pulling up. You only want to pull up a centimetre or two and then stop squeezing. To make my grass look even better I also switched pulling up to the left and right as well as straight to make it look more natural. Add 2 of the icing decoration flowers (I found these ones at Michael’s) and place one bunny bum on top of the grass and that’s it your done.
