One of my favourite things growing up (and as an adult) has always been cookie dough. As much as I know now that I maybe shouldn’t have been eating my mom’s chocolate chip raw cookie dough now, I would always eat it as a kid. It is my favourite ice cream flavour and I still love eating it so I thought why not make a no-bake chocolate chip cookie dough bar that was okay to eat raw was a great idea for me and the kids.
I created these no-bake cookie dough bars and I hope that you enjoy them too.
1/2 cup butter, softened
3/4 cup packed brown sugar
2 cups all-purpose flour (toasted in the oven for 5 minutes at 350° on a baking sheet lined with parchment paper) *see note
1 can sweetened condensed milk
2 tbsp peanut butter (optional)
1 cup milk chocolate chips
2 tbsp pink coloured chocolate wafers (approx 12) – optional based on holiday
In a bowl mix together butter and brown sugar until smooth. Add the flour in a little at a time and make sure it’s combined well. Using a hand mixer, add the sweetened condensed milk and beat on low until smooth and combined. Add the peanut butter in at this stage (optional). Put mixture into an 8×8 pan lined with wax paper (this helps you get the bars out later).
Place in fridge covered with plastic wrap and chill for about 20 minutes. While the bars are chilling, melt your chocolate chips in the microwave on 50% power in 30-second increments until the chips are melted and it is smooth. Pour over the chilled bars and smooth, making sure the whole top is covered. Place in fridge to chill for 1 hour or overnight.
Pop them out after they are set and cut them into bite-size squares. If you want to get a little more crafty, you can press the cookie dough bar into different shaped molds to make your favourite shapes like I did for this Valentine’s themed bar. You can find these molds online, in your local dollar store (this is where I got the hearts) or bulk barn. If you put them into gift boxes, they can make a great little gift.

* NOTE: To make sure your flour is free of bacteria, it is recommended that you toast flour for 5 minutes in a 350 degree oven if you are going to use it in a no-bake recipe
