I am sure by now that most people are sick of even hearing the word pumpkin, however, I indulge in the pumpkin loveliness every year. I love anything and everything pumpkin from my latte to cheesecake. I do not get sick of it or tire of it and I only can say that I wish every day was filled with pumpkin. With that being said, I wanted to have something with lots of pumpkin flavour without so many calories so I came up with these amazing baked mini-donuts. They are really easy and delicious!

Makes 36 mini donuts (using this Wilton mini donut baking pan)
Preheat oven to 350°
1 1/3 cup all-purpose flour
1 tsp baking powder
1 tsp pumpkin pie spice (I used this one)
1/4 tsp salt
1/2 cup milk
1 tsp vanilla
1/3 cup margarine, soft
2/3 cup white sugar
1/3 cup pumpkin puree, not pie filling (I used Stokely but you can use the E. D. Smith one, but they both are way bigger cans than needed)
1/2 cup icing sugar
1 tsp pumpkin pie spice
2 tbsp milk
Options: Orange sprinkles and pumpkin pie spice sugar ( 1/3 cup white sugar and 1 tsp pumpkin pie spice)
Grease your mini donut pan with margarine or non-stick cooking spray
Mix flour, baking powder, pumpkin pie spice, and salt together in a bowl. Add vanilla to the milk. Cream margarine and sugar together with an electric mixer, add in the eggs. Stir in flour mixture to the margarine and sugar mixture, alternating with the milk mixture until fully combined and the batter is smooth. Spoon batter into a piping bag with a large open tip and pipe into the donut pan until it is level with the middle pin. Bake in the preheated oven for 11 minutes.
While they are baking, mix up your glaze by combing the icing sugar, pumpkin pie spice, and milk until smooth and runny. You can add a little more milk a teaspoon at a time if the consistency isn’t just right. Dip the warm donuts into the glaze and sprinkle with either pumpkin spice sugar or orange sprinkles and allow to cool. You can also just add the warm donuts to the pumpkin spice sugar without the glaze as well.
Put them into a container and they will keep for 4 days.
