I have had many appliances over the years, some have been wonderful and some have been space hogging pieces I have never used. This is not the case with the 3 new appliances I received from Hamilton Beach. I am so excited to partner with a brand that I have loved most of my adult life and bring you some great information and even a really amazing tasty recipe too! I have been using two of these new appliances so much I don’t know why they were never part of my kitchen before now. Here are some solutions to save you time:
First up, an important part of my morning routine is the FlexBrew 2-Way Brewer. As much as I have loved my single serve coffee maker, this unit is much more convenient in that I can program it to brew a full pot (enough for both my husband and me) just in time for me to be up with the kids when back to school starts or I can make a single travel mug of coffee when I am about to walk out the door to take them to school. I love that it is easy to switch between the two. It comes with a single serve basket to use my own coffee but can take single serve cups as well. It’s like having the best of both coffee worlds and this mama is not good without my first coffee.
Next up is totally the best thing for my daughter for her busy mornings, the mini single-serve blender. This school year is going to be a huge adjustment for her as she heads to her first year in high school. This also means her first year taking transit to and from school on her own. She has to be up at 6 a.m. at the latest to be out at the bus stop for 7:10 and this means that she will more than likely forego breakfast to do her hair instead. This handy little blender can help her grab a quick smoothy to take on the go when she doesn’t have time for cereal or oatmeal. I love that it’s small but powerful and crush ice and frozen berries easily. Throw in some yogurt and milk and she’s got the perfect, healthy start to her day.
My last and by far my favourite new appliance has to be the deep dish ceramic skillet. It’s the best thing since sliced bread. I have only had it a few weeks and I have literally used it at least 3 times a week since it came out of the box. The versatility of this appliance has made it my new go to for almost every meal I can use one pot for. My daughter even loves cooking in it as it doesn’t freak her out like using the oven. Did I mention it’s electric? Which means I have been using my oven less and heating up my house less as well. I have made 3 new recipes in it and I can tell you I have a million more ideas to try out. I am going to share one of them with you now that is super easy and ready in under 25 minutes which is perfect for weeknight meals during the school year.
Tex-Mex Chicken and Rice Skillet Meal
6 boneless, skinless chicken breasts, cut into chunks
1 tbsp. olive oil
1 medium red pepper, diced
1 medium green pepper, diced
1 medium yellow pepper, diced
1 large onion, diced
2 pkg. taco seasoning mix
2 cups long grain rice
1 can Italian-style diced tomatoes (I always get the no salt added ones)
1 can sweet corn niblets
1 cup tex-mex shredded cheese (you can use any shredded cheese for this)
1/2 cup sour cream
2 cups water
Turn on the skillet to 300°. Add in the olive oil, onion, and chicken. Cook until browned and no longer pink and the onion is translucent about 8 minutes. Add in both packages of taco seasoning and 1/2 cup of water and let simmer for 5 minutes. Add in peppers, corn, tomatoes, the remaining water, and rice. Stir until blended well and reduce heat to 250°. Let simmer 20 minutes until rice is cooked and the liquid is gone. Serve topped with some shredded cheese and a dollop of sour cream and enjoy.
