This recipe was literally born from frustration. I really wanted to do a brownie based chocolate cheesecake but no matter what I tried I could not get it the way I wanted it but I love cheesecake so much that I needed to come up with an idea that gave me everything I loved about cheesecake while making it easy to do. So I decided to stir things up and this was the best idea I have ever had. It literally takes all the things you love about cheesecake and combines them into a no-bake recipe. It tastes delicious, only took about 20 minutes to put together and it is the perfect summer dessert and easily transportable to any summer BBQ or function you may have. Ingredients
1/2 cup each of graham crumbs and oreo cookie crumbs
1 cup whipping cream
1/4 cup Nesquik powder
2 pkg cream cheese, room temperature
1/8 cup whipping cream
1/3 cup Nesquik powder
1 can sweetened condensed milk
1 cup various summer fruits of your choosing chopped small
Using a mixer on medium speed, combine the 2 packages of cream cheese, Nesquik powder and 1/8 cup whipping cream. Mix well until smooth and all the lumps are gone. Add in the can of sweetened condensed milk and mix until blended. Place into a decorating bag and place in the fridge for an hour. While the cream cheese mixture is chilling, cut your summer fruit into small chunks and set aside. Combine the cup of whipping cream and 1/4 cup Nesquik powder and beat on medium until soft peaks form, transfer to a decorating bag and set in the fridge until you are ready to make up the parfaits.
I was able to get 9 servings using the disposable 4oz wine glasses I used in the photos but you will get more or less depending on what you put the parfaits into. You could also make half-sizes for the kids to enjoy too. When you are ready to make your parfaits, do them in layers. The layers are customizable and you can do them in any order you want. I did 1 tbsp of graham crumbs on the bottom followed by the cream cheese mixture then fruit pieces, then the oreo crumbs, then cream cheese mixture. I then topped it off with whipped cream and fruit and a dusting of Nesquik powder and a drizzle of Nesquik syrup.
I love that the cheesecake has a subtle chocolatey taste but that it’s not overpowering. These are a perfect treat for summer entertaining or as a mid-afternoon snack. I will be making these again as they are easy and effortless and the kids can help with this one too and even put in toppings that I don’t have listed to add to their own. I think this would make a great addition to any build your own parfait dessert bar this summer, don’t you think?
