I am literally the worst lately for having meals done on time, not to mention I have been literally looking at the clock at 6 p.m. and thinking “oh crap I have nothing out for dinner!” I needed to find a few easy weeknight meals that I could do in 20 minutes or less because as much as I have loved the laid back days of summer holidays, sadly, they are coming to an end and the kids are heading back to school. I can’t believe that they are literally going back in 10 days, my husband starts working again after losing his job in January and it will be me home with my little guy and the blog. I need to find my groove again now that my husband is going back to work because he has been home the entire year of Toby’s life and we will need to find our own way of doing things once daddy is gone.
I have done it before and I will do it again, it will just mean reorganizing our life and changing things up so that I can still get work done during the day and have dinners ready and on the table for 5 every night so the kids can get ready and into bed on time for school mornings.
