I think there is nothing better than a fresh, crisp salad in summer. Most I find are amazing for entertaining or for those days when you just don’t want to cook because it’s too hot. I loved the idea of broccoli salad but I had never actually tried to make one myself until recently.
I went to an event a few weeks back and they sent me this really lovely package of Nosh & Co products but I wasn’t sure what I was going to use them for. I mean there isn’t much you can do with seeds in this house that my kids will eat but then I thought about a nice crisp salad and this broccoli salad idea was born. I hope you enjoy it as much as we did.
4 cups broccoli florets, cut bite sized
1 cup diced red onion
1 cup craisins (or regular raisins)
1/2 cup Nosh & Co. Sunflower seeds (or another brand of roasted, unsalted seeds)
1/4 cup Nosh & Co. Pumpkin seeds (or another brand of roasted, salted pumpkin seeds) – optional
3/4 cup crispy bacon, crumbled
1 cup shredded sharp cheddar
1 cup Kraft Miracle Whip
1/2 cup sour cream
2 tbsp 10% cream
1 tbsp balsamic vinegar
1/2 tbsp parsley
1 tsp pepper
1 tbsp brown sugar
Cook the bacon until crispy, let cool and then crumble. Mix the broccoli, craisins and both seeds together in a large bowl. Add in the bacon and mix again until combined. Set aside. In another large bowl, combine the miracle whip, sour cream, cream, and balsamic vinegar. Mix until well combined. Add the parsley, pepper and brown sugar and mix until smooth. Add into the broccoli bowl and mix until well combined and the entire salad is covered. Add in the cheese and mix until just combined. Serve alone or as part of a meal.
I have never really had broccoli salad before although I love it both raw and cooked. This salad is a must-have for summer entertaining and will leave your guests asking for seconds.
