I love all things lemon. Lemonade, lemon flavoured water, iced tea with just the right amount of lemon in it, lemon cakes, lemon pies, okay you get the idea. I wanted to do a Nestea inspired lemon mini tea loaf because I thought it would be the best way to incorporate cold tea and lemon without being over the top sweet. I was right to think these two things could go together as wonderfully as they did.
These lemon mini tea loaves came out beautifully and they were perfectly lemony without being too sweet. Nestlé has also reduced the amount of sugar in Nestea Iced Tea mix by 25% also makes these loaves have just the right amount of sweetness. They were also pretty easy to make and although I did try a full-size loaf, it didn’t turn out half as great as the mini ones did and why not stir things up a little and make these the perfect size for a quick afternoon snack. Ingredients for Lemon Goodness
Preheat oven to 325°C
1/2 cup margarine, softened
3/4 cup sugar
1 tbsp lemon zest
1/2 cup of Nestea Iced Tea, prepared using lemon juice instead of water (1/2 lemon juice, 1/2 tbsp Nestea Iced Tea powder)
1 1/2 cups all-purpose flour
1/2 tbsp baking powder
1/2 tsp salt
1 tsp lemon extract
For the Lemon Flavoured Glaze
1/2 cup icing sugar
1/2 tbsp lemon juice (I used RealLemon)
Beat margarine, eggs, lemon zest, lemon extract and sugar together on medium for 2 minutes. Sift flour, baking powder and salt together and add slowly to margarine mixture. Slowly blend together while adding in the iced tea as you go until well blended. Put into a mini loaf pan lined with paper and bake for 28 minutes.
Once baked, remove from the paper and place on a cooling rack until cooled completely. Mix the icing sugar and lemon juice together to form a glaze and drizzle over the tops of each loaf. I have a pan that holds 8 mini loaves and that is exactly what this recipe made. I absolutely love these as they aren’t too over the top and small enough to indulge without the guilt.
