Feeding a family of 7 is exhausting. I meal plan as much as I can because it saves me money in the long run. If I have a plan of what we are making, I can go to the grocery store with a list, this way I save money by only buying what we really need and I have an idea of what we are eating all week. No more last minute dinners or eating out because it’s quicker. The best part of this easy foil wrap chicken recipe is that is can literally appease even the pickiest of eaters because you can change the items in each foil wrap to make them unique to each member of your family without adding too much work or doing a separate meal.
I find this recipe easy and you can do the prep work the night before and then throw them in the oven the next day for 45-50 minutes and you are all done. Make a quick side salad and you have yourself a great meal. The only 2 items that I put in all the foil is the chicken and potatoes but the vegetables are up to each individual.
Boneless, Skinless Chicken breasts (I use a package of 8)
1 can Campbell’s Roasted Red Pepper & Tomato condensed soup
1-8 oz pkg. of plain cream cheese
2 tbsp. Clubhouse Vegetable seasoning
1 tsp pepper
1 tsp salt
1 tsp garlic powder
1/4 cup Italian dressing
1 cup shredded cheese, any variety (I used double cheddar)
Variety of fresh vegetables cut into smaller portions (I used cauliflower, peppers, onions, carrots and asparagus)
6 potatoes, washed and cubed
Preheat oven to 400 degrees
In a bowl, mix the cubed potatoes with the Italian dressing and set aside. Mix the soup, cream cheese, vegetable seasoning, pepper, salt and garlic powder, put chicken breast into this mixture and cover the entire piece.
Grab large pieces of foil about 1 arm’s length long for each piece of chicken. Place about 6-7 potato chunks and an assortment of vegetables on the bottom of the foil and top it with a piece of chicken and some cheese (if using asparagus add them on top of this then wrap the foil around the chicken and vegetables to form a pouch. Put all the pouches on a baking sheet and put in the oven for 45-50 minutes. Check for doneness by using a thermometer to make sure the chicken is 165-170 degrees. I love this easy foil wrap chicken recipe because I can customize for each of my kids and then I put it in the oven and dinner is done.
